Our series highlighting some of the finest dining in Las Vegas continues here with our freshest, tastiest, most fun summer salads. Once again we went straight to the experts, the chefs at our fabulous Vegas restaurants, and here’s what they lettuce know.

Our Favorite Salad No. 1: Shrimp Salad
Where: The Broiler at Boulder Station
Chef Diana’s Comment: The Broiler’s shrimp salad is featured every day on our salad bar. It’s light and delicious with a touch of dill.

Our Favorite Salad No. 2: Cantina Fajita Salad
Where: Amigo’s Mexican Cantina at Fiesta Henderson
Chef Frank’s Comment: Fajita style! We begin with a bed of freshly chopped lettuce and add our special blend fajita steak or char-grilled chicken. Accompanying our flavorful meat is diced avocado, diced tomatoes blanketed with shredded cheese and topped with crispy tortilla strips and your choice of dressing.

Our Favorite Salad No. 3: Greek Salad
Where: T-bones Chophouse at Red Rock Resort
Chef Joseph’s Comment: It is a great salad for the summertime, nice and light with a lemon oregano dressing. It contains baby romaine, bibb and baby iceberg lettuce. Topped with red peppers, pepperoncinis, Kalamata olives, feta cheese, cherub tomatoes and English cucumbers. It is a perfect salad for the summertime!

Our Favorite Salad No. 4: Harvest Salad
Where: Terra Verde at Green Valley Ranch
Chef Chris’s Comment: Crisp Granny Smith apples, mixed baby field greens, sun-dried cherries, candied walnuts, crumbled Gorgonzola and Balsamic Vinaigrette. The Harvest Salad debut on our new lunch menu, however, we will make it any time as guest request it…we enjoy making guests happy with Food from the Heart!

Our Favorite Salad No. 5: Chopped Salad
Where: Sonoma Cellar at Sunset Station
Chef Joseph’s Comment: Finely chopped baby romaine hearts with diced beefsteak tomatoes, diced bacon and diced avocado. All tossed together in our house-made white French dressing.

The salad fork only has three prongs and should be placed to the left (outside) the dining fork, which has four prongs, in a traditional table setting.

Our Favorite Salad No. 6: Lobster Salad
Where: Sand Bar at Red Rock Resort
Chef Joseph’s Comment: Classic diner greens with Tristan lobster, avocado, asparagus, tomato, red onion, hard-boiled eggs, lemon crown and Citrus Louie dressing.

Our Favorite Salad No. 7: Insalata Italiana Salad
Where: IL Vino Cucina at Aliante Station
Chef Steven’s Comment: A combination of crisp romaine, genoa salami, Italian cheeses, California olives and grana padana cheese tossed in an herb vinaigrette.
