Whether you’re sleeping on a friend’s couch or in one of our luxurious suites on Dec.31/Jan. 1 (or not sleeping at all), here’s a list of all our Las Vegas New Year’s Eve 2010/2011 events, parties, concerts, hoedowns and hoo-has.

THE GRAND CAFE, the best 24-hour dining option in Las Vegas, is opening, or should we say reopening on Dec. 27 at Palace Station.

We could say a lot about how excited we are to have the Grand Café back at Palace – as well as Sunset Station, Boulder Station, Texas Station and Santa Fe Station in the coming months – but instead we’ll let Larry Neely, the Director of Food & Beverage at Palace, be our champion.

Once again, that’s the grand reopening of the Grand Café on Dec. 27, 2010 at Palace Station. Please join us!

LAS VEGAS – Tbones Chophouse & Lounge, the chic award-winning steakhouse at Red Rock Resort, is proud to announce the launch of a new dazzling lounge experience. Aptly named T-time, this alluring experience is the ultimate hotspot for innovative dishes, hand-crafted cocktails and lively conversation, with 50 exceptional items offered daily from 5pm-7pm, for just $5 each.  With the restaurant’s attractive décor of rich reds and browns, a live piano player nightly, and intimate tabletop lounge and bar seating, T-time is the essential destination to unwind and people-watch with friends over an array of inviting offerings.

Fifty $5 items, including Chicken and Waffles and Cotton Candy Martinis, every day from 5-7pm at Tbones.

Created by Executive Chef Joseph Kudrak, the T-time experience is happy hour done right, featuring a bevy of generous-sized dishes such as the Buffalo, New York-classic beef on weck, chicken and waffles, chili and cheese tater tots, crispy rock shrimp tempura, chicken pot pie and pulled pork sliders.  Bar snacks take on a whole new meaning with creative tastes such as bacon popcorn, flash-fried shishito peppers tossed with smoked sea salt and sinfully delectable desserts including fried Oreos and crème brulee.

“When we created the T-time concept, it was important that we provide something we knew the guests would want, and present it to them in an interesting fun way,” said Chef Kudrak.  “We didn’t want to simply create another happy hour special, but rather a destination location for locals to socialize over great food and drinks.  We feel we have done just that with the ‘50 for $5 at 5’ offerings and are delighted to exceed guest expectations.”

The experience wouldn’t be complete without creative beverage pairings, which were conceived by Director of Beverage John Arishita.  The sweet notes in the whimsical cotton candy martini perfectly balance with the salty-spicy crunch of the chicken and waffles topped with jalapeno-infused maple syrup. Try the crisp and refreshing gin garden to cut through the richness of the creamy chicken pot pie, or for a decadently sweet finish, pair Young’s Double Chocolate Stout with the deep-fried Oreos.

RECIPE BOX: Low-Fat Eggnog

Great holiday taste without the guilt!

CHEF DIRK IS in the holiday spirit this week with a recipe for guilt-free eggnog.

Ingredients

  • 6 cups of 1% milk
  • 1/8 tsp of freshly grated nutmeg
  • 2 large eggs
  • 2/3 cup of granulated sugar
  • 2 Tbl of all-purpose flour
  • ¼ tsp salt
  • ¼ cup of brandy (bourbon or rum)
  • 2 tsp of vanilla extract
  • ¼ cup of light whipping cream

Method

  1. Bring nutmeg and milk to simmer in a heavy sauce pan over low heat, stirring occasionally. Do not boil.
  2. Whisk eggs, flour, sugar and salt in a large bowl until smooth.
  3. Whisking constantly, gradually add hot milk; return mixture to sauce pan.
  4. Cook eggnog over very low heat, stirring constantly, until thick enough to coat the back of a spoon, 10 to 15 minutes (temperature should be 160 degrees; do not let eggnog come to a simmer). Remove from heat and pour through a fine-meshed sieve into a bowl.
  5. Whisk in your choice of liquor or vanilla. Place a piece of plastic wrap directly on the surface of the eggnog and refrigerate until chilled, at least 8 hour or overnight.
  6. Just before serving, add cream to eggnog.

8 Tips Including Las Vegas Hotel Deals for the Maaco Bowl

WE GOT A great game!

Oh, so the season didn’t go exactly as you had hoped. You fans loyal to the team that plays on the blue turf, you had your undefeated dreams rather cruelly dashed a few weeks ago. And you, Ute Nation, stop thinking back to early November, to that epic game of non-BCS powers that didn’t turn out so great.

By most accounts, it’s still been very good seasons for both Boise St. and Utah fans and here’s your chance to make a lemon margarita out of lemons.

The way we see it, if you’re not going to a BCS game, the Maaco Bowl in Las Vegas (Wednesday, December 22 at 5pm PST at Sam Boyd Stadium) is the next best thing. If you’re traveling down for the game, we hope you’ll stay with us. Here are some reasons to stay at Station Casinos and a few insider tips for game day:

It’s warmer here! According to weather.com it’s going to be in the 50s for game day. That being said, if the wind is blowing, which it has been known to do in December at the stadium, don’t forget your sweater.

You can bet…legally. The lines for many of the bowl games are already out in our Las Vegas Sports Books, where you can place a friendly wager on your team or any other race and sports action going on while you’re in town.

Cheap, ahem…affordable buffets! With a few exceptions (GVR dinner is $11.99), Stations Casinos has $4.99 breakfast, $6.99 lunch and $8.99 dinner at its Feast Buffets in December.

Some of the parking spots at Sam Boyd are nicer than others.  As usual, arrive early for tailgating if you care about your spot.

There are plenty of places to buy tailgating supplies on Boulder Highway, but when you turn off Boulder and onto Russell Road heading to Sam Boyd Stadium, there’s a gas station that is the last place before entering the parking area.

FINALLY, EH? GEORGES St. Pierre and Josh Koscheck will rematch this Saturday night, December 11 in Montreal. The coaches from this season’s The Ultimate Fighter (TUF) show on Spike TV aren’t friends. Not even close. If you watch the show, you know that these fighters couldn’t be more opposite from one another. GSP is quiet and confident. Koscheck’s trash talk has been “writing checks” all season long, and we are all waiting to see if GSP is ready to cash those “checks” in. The boos will be deafening in St. Pierre’s turf when Kos is announced, but that’s pretty much the only sure thing at UFC 124.

Other matchups we’re excited for on Saturday night: Two towering giants collide! 6’11 Stefan Struve vs. 6’7 Sean McCorkle should be exciting. We’ll see if McCorkle’s 33lbs is an advantage or not. UFC Veterans, Joe “Daddy” Stevenson vs. Mac Danzig could go 100 mph in any direction, to the mat or end by strikes. Jim Miller vs. Charles Oliveira have the MMA blogs buzzing. Many think this will be fight of the night. Also, do. Not. Miss. The Muay Thai battle between Thiago Alves (beat Koscheck awhile back) vs. John Howard (wild, crazy exciting fights).
