Block16 Hospitality To Open Pink’s Hot Dogs at Red Rock Casino Resort & Spa

Block16 Hospitality continues to expand its multi-faceted restaurant portfolio with the addition of Pink’s Hot Dogs, the second Pink’s Hot Dogs in the Block16 line-up.  Located at Red Rock Casino Resort & Spa, Pink’s Hot Dogs is unlike any other hotdog stand in America, featuring classic and unique dogs to please every palette.

Replacing Turf Grill, Pink’s Hot Dogs will be located near the poker room and race and sports book inside the resort-casino and boast an impressive 2,000 square feet of restaurant space. Set to open Winter 2012, the menu will be very similar to the other Las Vegas outpost of Pink’s Hot Dogs.

Guests will be able to enjoy cult classics such as the Guadalajara Dog, Poli-Bacon Chili Cheeseburger and Pink’s famous Chili Dog. The menu will include sinful sides like Pink’s Famous chili cheese fries and Loaded Nachos.  For non-“dog” eaters, there are plenty of items to choose from such as Pink’s famous Turkey Dog and Veggie Burgers.

Block16 Hospitality, the locally owned and operated hospitality powerhouse, opened three restaurants in under a year with Holsteins Shakes and Buns in the Cosmopolitan of Las Vegas, The Barrymore in the Royal Resort and Public House at The Venetian, which all opened throughout the course of 2011. Block16’s impressive portfolio also includes Gallery Nightclub at Planet Hollywood Resort & Casino, LBS Burger, LBS Patty Wagon food truck and Pink’s Hot Dogs, also at Planet Hollywood Resort & Casino.

Impress Your Friends With Seasonal Items

SPRING IS APPROACHING and it’s time to go after the seasonal items that have been missing for a while. Go to local farmers markets and get the inside scoop. Take advantage of crops that aren’t readily available to the masses.

Have your neighbors over and make them jealous that you scooped them on the good stuff. It’s guaranteed to impress them. It’s a great time for vegetables and fruits like asparagus, artichoke and strawberries, and let’s not forget about the refreshments.

It’s time to break out the bartenders books and remember how to make a Margarita, a Hurricane, or just enjoy your favorite gin with a boutique tonic water. Blood oranges and berries are good bet for Spring, especially if you want to try your own hand at cocktail invention.

You can’t go wrong adding Rum or Vodka which are perpetually in season. Rye Whiskey and all manner of fruits and nectars work nicely together this time of year. Don’t forget about grapefruit, which goes nicely with Tequila! The key to this season is color. Make sure its plentiful both on your plates and in your glasses (and those of your guests).

Whatever your plans, change things up a little. With a nod to the changing of the seasons, life deserves a good kick start to follow mother earth as she defrosts and the sun makes its annual pit stop between the ski slope and the pools and beaches of summer.

Savor This: Some of the Best Steaks in Las Vegas

WE’VE LOGICALLY PROGRESSED our way up to today’s post highlighting what we think are some of the best steaks at some of the best steakhouses in Las Vegas. If you don’t remember, let’s recap with bullet points and links.

App. Salad. So naturally we’re ready for some entrées and here are six of our best Las Vegas steaks, once again hand-selected and commented on by the chefs who prepare them at our first-class steakhouses.

Our Favorite Steak No. 1: 16 oz. Prime Boneless New York Steak

Where:
Tbones Chophouse at Red Rock Resort

Chef Joseph’s Comment:
A recent addition to our menu is the 16 oz. Prime Boneless New York Steak from Niman Ranch. The steak is exceptionally marbled, which contributes to it being so tender and juicy. This particular steak is prepared over an 800-degree, mesquite-wood broiler, which sears the outside of the steak trapping in those natural juices, and adds a nice flavor to the steak as well. Another attribute to this steak is that it is naturally raised on small sustainable family farms; they are fed an all-vegetarian diet, do not use any antibiotics or hormones in the raising of their cattle.

Our Favorite Steak No. 2: 20 oz. Porterhouse

Where: The Broiler at Boulder Station

Chef Diana’s Comment: Our juicy 20 oz. certified-Angus-beef Porterhouse steak is brushed with a seasoned steakhouse butter and served with our market-fresh salad bar and warm bread.

Advice on buying quality steak knives

One thing that I look at is whether the knife has a full tang, meaning is the blade one solid piece that goes all of the way through the handle or is it a small piece at the beginning of the blade that the handle is just attached to. You definitely want the full tang. The other decision is serrated or non-serrated. Personally I prefer the non-serrated sharp edge. To me, serrated knives tend to tear the steak as you saw through it, although you will want to make sure you have a steel or electric sharpener if you decide to buy a non-serrated edge. I included a photo of the knife that we are currently using at Tbones. Notice how the blade goes through the handle and it has a nice curve to it so it ergonomically fits your hand. – Chef Joseph

Chef John’s Comment: A mouth-watering Midwest USDA choice grade, aged 21 days and cooked over an open-pit mesquite grill.

Our steaks are grilled over mesquite wood. USDA-graded Midwestern, 21-day wet-aged choice beef. Seasoned with sea salt and whole butter.

The secret to a beautiful presentation is to mark the steak quickly by forming diamond shapes.

The perfect combination of tenderness and a rich, hearty flavor. Ribeye steaks are distinguished by their rich marbling and natural flavors. Grilled over mesquite.

Chef Frank’s Comment: Fajita style! We begin with a bed of freshly chopped lettuce and add our special blend fajita steak or char-grilled chicken. Accompanying our flavorful meat is diced avocado, diced tomatoes blanketed with shredded cheese and topped with crispy tortilla strips and your choice of dressing.

Our Favorite Salad No. 3: Greek Salad

Where: T-bones Chophouse at Red Rock Resort

Chef Joseph’s Comment: It is a great salad for the summertime, nice and light with a lemon oregano dressing. It contains baby romaine, bibb and baby iceberg lettuce. Topped with red peppers, pepperoncinis, Kalamata olives, feta cheese, cherub tomatoes and English cucumbers. It is a perfect salad for the summertime!

Our Favorite Salad No. 4: Harvest Salad

Where: Terra Verde at Green Valley Ranch

Chef Chris’s Comment: Crisp Granny Smith apples, mixed baby field greens, sun-dried cherries, candied walnuts, crumbled Gorgonzola and Balsamic Vinaigrette. The Harvest Salad debut on our new lunch menu, however, we will make it any time as guest request it…we enjoy making guests happy with Food from the Heart!

Our Favorite Salad No. 5: Chopped Salad

Where: Sonoma Cellar at Sunset Station

Chef Joseph’s Comment: Finely chopped baby romaine hearts with diced beefsteak tomatoes, diced bacon and diced avocado. All tossed together in our house-made white French dressing.

The salad fork only has three prongs and should be placed to the left (outside) the dining fork, which has four prongs, in a traditional table setting.

Chef Joseph’s Comment: Classic diner greens with Tristan lobster, avocado, asparagus, tomato, red onion, hard-boiled eggs, lemon crown and Citrus Louie dressing.
