The steak dinner giveaway is part of a meatier message from Station Casinos: A Great Steak is Just Around the Corner! In other words, you don’t have travel too far or pay too much to get the best cut of beef in Las Vegas. For instance, the four winners of this month’s steak dinners at The Charcoal Room will be able to select from Filet Mignon, New York, T-Bone or Ribeye. If you’re like me, you know you love steak but don’t know all that much about the actual cuts. Here’s a breakdown courtesy of Bryan “T-Bone” Dillon, director of luxury culinary operations at Station Casinos.

Tenderloin (Filet Mignon)
Known as the most-tender cut of beef as well as the “Cadillac of Steaks.” Extremely juicy and when cooked over high temperatures on a seasoned wood grill it produces a flavor profile that is buttery and mild with a succulent flavor and consistently great eating. This is cut from the least-used muscle on the animal and therefore doesn’t get overworked and tough.

New York Sirloin (aka New York Strip)
Bone-in or boneless, this is a lean and tender eating steak with a robust classic beef flavor absolutely perfect for people looking for a great beef experience.

Porterhouse or T-Bone
Truly the best of both worlds as it is comprised of both the tenderloin and the New York sirloin. It boasts extremely tender cuts and has exceptional beefy flavor because of the bone that runs through the center. Known as the “King of Steaks.”

Ribeye
A true steak-lovers steak: rich flavor, juiciness and tenderness with rich marbling throughout. Pan-seared or grilling produces outstanding results. One of our guests’ favorites, hands-down.

“Our steaks are certified Angus Beef, which boasts superior marbling for flavor and juiciness and is consistent in coloration and texture,” Dillon said. “Our product is graded to meet Station Casinos’ demanding specifications and is chosen only from animals that meet our standards for age, breed and finish (i.e., corn-fed an all vegetarian diet to produce consistent marbling throughout).”

Sushi Avenue 2 starts rolling in November at Santa Fe Station.

LAS VEGAS – Sushi Avenue 2 will be joining the dining line up at Santa Fe Station in early November bringing the freshest sushi, oysters and sake to the guests of the Las Vegas hotel and casino.

The original Sushi Avenue opened in Las Vegas in 2004 at Flamingo and I-215 and quickly grew to be among one of the most popular local sushi restaurants in town that provides the freshest sushi at a great value. Sushi Avenue, and its second location at Santa Fe Station, are owned and operated by the very personable and hilarious executive sushi chef Bruce Lee, who is taking Sushi Avenue’s success and expanding its presence to the northwest side of town. Sushi Avenue chef Cory Ha, who assists Lee in creating the restaurant menus will also be part of the Santa Fe Station Sushi Avenue 2 leadership team.

The restaurant will offer an array of sushi, with fresh fish flown in daily, an oyster bar and a sake lounge featuring more than 20 sakes as well as a great selection of sake cocktails, beer and wine. Sushi Avenue 2 will feature many favorite dishes served at the original location, and this new outlet will also create new menu items exclusive to Santa Fe Station. Sushi Avenue favorites include: creamy spicy king crab with chipotle aioli sauce, Thai flavored seafood gumbo with crab, shrimp and andouille sausage, sashimi Carpaccio, soft-shell crab Diablo with bacon and roasted garlic sauce, miso black cod, and avocado-crusted Chilean sea bass to name a few.

Sushi Avenue 2 will be open for dinner and late-night dining Sunday through Thursday from 4pm until midnight, and Friday and Saturday from 4pm until 1am. The restaurant will be located in the space formerly occupied by Tides Oyster bar by the north parking garage and valet area.

While that other famous poker tournament readies next week to shuffle up and deal its final table, Station Casinos is set to start our own big-money Las Vegas poker tournament.

Qualifying for the $300,000 Poker Plus Tournament starts this Sunday (Nov. 1), and runs until December 31 at all participating Station Casinos poker rooms. Basically, players need to be dealt in at one of our poker tables for 50 hours (one long session for some players) during the two-month span to qualify for the big Texas Hold’em tournament, which will be held Jan. 9 and 10, 2010 at Texas Station.

“There is no buy-in; just log 50 hours of live action on your Boarding Pass,” said Mike Doe, poker manager at Red Rock Resort. “All players that play the tournament are guaranteed at least $75 when they are eliminated from the tournament.” Additionally, qualifying comp points will be awarded at the rate of 600 points per hour during the next two months, while from 3am through 9am points will be awarded at a rate of 1,800 points per hour.

Doe said he will be rooting for short-stacked Phil Ivey to win that other tournament’s main event bracelet because Mr. Ivey is an occasional guest on the Red Rock gaming floor. Will Ivey, often regarded as the best poker player in the world, get a seat at Station Casinos’ $300,000 Poker Plus Tournament?

“Only if he qualifies,” Doe said.
